“I can’t believe I ate the whole thing” Detox Juice

Overdid things a bit last night? This refreshing and detoxifying juice will reboot your system and leave you feeling clean and light. The celery flushes toxins from the body and is a natural diuretic. Carrot is a natural liver cleanser and stimulates digestion, as do the lettuce and spinach. Add a little fresh ginger for some zip and sip throughout the day to get your body back on track.

Green Smoothie

Ingredients

  • 2 carrots, chopped
  • 3 celery stalks, chopped
  • 2 cups of spinach OR 2 cups of lettuce
  • 1 cup of fresh parsley
  • juice of 1/2 lemon
  • 1-2 cups of filtered water or coconut water/juice

Directions

Place all ingredients in a high speed blender and blend for one minute. Pour through a fine sieve into a large pitcher or bowl, pushing the fibers with a large spoon to remove all liquid. Return liquid to blender, add ice, and blend for another 15 seconds. Drink immediately and enjoy throughout the day.

Other detoxifying ingredients include:  cucumber, watercress, cabbage, beets, and apples. Play with these ingredients and make your own potion!

Peach-Perfect Iced Maté

We first drank a concoction similar to this when we were at Fruttis juice bar and restaurant in Abadiania, Brazil. If you’ve ever had yerba maté tea (also known as mate), you’ll remember it for its very distinct “toasted” flavor–it tastes a bit like green tea, only smoother and nuttier. Traditionally, people drink it hot, but this frothy iced version has become our new favorite way of enjoying mate. This recipe works well hot or cold, but the frozen, “whipped” version is a must-try, must-serve at your next party!

Peach-Perfect Iced Maté Tea

Peach Perfect Iced Maté

Ingredients

  • 3 cups of warm water
  • 3 bags/sachets of organic mate (yerba mate) tea
  • 1 1/2 cups of frozen organic peaches
  • Optional:  honey or agave nectar

Directions

Warm the water and allow the bags to steep for at least 15 minutes. (Boiling the water will cause the flavor to become bitter, so a “slow steep” will produce a much smoother blend.) When the water has turned a deep golden brown and has cooled, place in a blender or Vitamix with the frozen peaches and blend until frothy and cold. Add sweetener only if necessary.

A hot version can be made by adding the pureed peaches to a hot cup of tea and then stirring thoroughly.

More About Maté

Brazil is the largest importer of mate in the world, and was originally cultivated by the Tupi and Guarani tribes in Southern Brazil and Paraguay. It’s made by crushing the dried leaves of a species of holly plant found in the South American rainforest. The branches are often dried over a fire, which gives mate its smoky flavor.

Health benefits:  Mate has strong anti-inflammatory, antioxidant, and lipid-lowering properties. In fact, in 1964,  the Pasteur Institute and Paris Scientific Society concluded, “it is difficult to find a plant in any area of the world equal to mate in nutritional value” and that yerba mate contains, “practically all of the vitamins necessary to sustain life.” Mate vendors claim it can “boost immunity, restore youthful hair color, retard aging, combat fatigue, control the appetite and eliminate insomnia,” to name a few!

Note:  Yerba Mate contains about 30 milligrams of caffeine/mateine in an eight ounce cup, according to a recent Health Canada report, compared with 47 milligrams in a cup of tea and 100 milligrams in a cup of coffee. Many people say that they actually get a bigger boost from mate without the coffee jitters!

Viva Recipe: Energizing Cucumber Smoothie

This refreshing smoothie will wake you up on a sleepy morning! Cucumber helps to remove the built up of toxins and excess waste in the body, which is why it’s often recommended to put a few slices over your eyes to reduce puffiness. Watercress clears up the lungs, improves circulation, and freshens the breath. Finally, coconut water is low in sugar while providing natural sweetener, and it contains more potassium than most sports drinks!

Ingredients

  • 1 whole cucumber, peel removed
  • 1 cup chopped fresh watercress
  • 1 cup romaine lettuce
  • 1-2 cups of coconut water (preferably fresh)
  • 1 tsp. fresh ginger

Blend thoroughly and drink immediately. Add 1/2 cup of ice for some extra wow!

Viva’s Favorite: Sunflower Seed Cheese (Recipe)

Hands down, this is one of our very favorite go-to recipes. It makes a flavorful dip, works great as a spread in wraps, and is so unfrigginbelievably good that Leigh always claims she’d eat her own hand if it was covered in this spread. It’s THAT good.

  • 1/2 cup fresh lemon juice
  • 1/2 cup Nama Shoyu or Bragg’s liquid aminos
  • 4 to 5 cloves garlic, peeled (we usually only use 2 or 3)
  • 2 3/4 cups raw sunflower seeds, very finely ground in a food processor

In a high-speed blender, combine all of the ingredients, adding the sunflower seeds last. Blend thoroughly until the resulting spread is smooth and uniform.

HINT: We sometimes add more water for a smoother spread. You can add up to 3/4 cup additional water and the consistency is still very thick.

Recipe: Joy of Summer Salad

This is not your ordinary salad….perfect to bring to a party as a vegan side dish. Of course, we’d probably eat the entire thing ourselves!

Ingredients

  • 1 head of your favorite lettuce
  • 4 stalks celery
  • 4 tomatoes
  • 1 mango
  • 1 avocado
  • 1 ear sweet corn, husked
  • squeeze of lime
  • pinch of sea salt  (optional)
  • basil or cilantro (optional)

Directions

  • First, wash all produce thoroughly. Next, roughly chop or rip up your lettuce and place it in your favorite mixing bowl.
  • Dice the celery in small pieces for a fun crunch, chop tomatoes and add both to the mixing bowl, tossing gently.
  • Peel the mango and slice the fruit off of the pit, doing the same with the avocado. Cut both into small cubes. Stir these into your salad bowl as well, getting all the juices flowing to marinate the lettuce without the need for any oil.
  • Add salt (optional). Squeeze on as much lime juice as you like. Then use a knife to scrape the kernels off the ear of corn and sprinkle them on the top.
  • Garnish with basil or cilantro if desired. No dressing necessary on this one!

Viva Recipe: Naughty Monkeys

Looking for a quick treat that’s not too sweet? Leigh invented these little babies this afternoon. They’re awesome because they don’t use any sugar and they’ve got cacao chips, so you get the chocolate without the sugar.

We decided to call them “Naughty Monkeys,” but really, there’s nothing naughty about them. They’re delicious, addictive, and good for you…and did we mention that they only take about 10 minutes to make? What are you waiting for?

Ingredients

  • 1 cup of almonds
  • 1 cup of coconut flour
  • 2 ripe bananas, chopped
  • ¼ cup unsweetened coconut flakes
  • ¼ cup cacao nibs
  • pinch of salt

Directions

Grind the almonds in a food processor for at least a minute until they reach a flour-like consistency. Add the coconut flour and bananas and process until the dough is smooth and begins to “turn over” in the processor like dough. (About 2 minutes.)

Roll into balls, then roll each in a coating of cacao nibs and coconut flakes. Serve after eating 2 yourself first, or there won’t be any left!

Number of servings:  18-20 pieces

Recommendation: soak the almonds for at least 4 hours (preferably overnight). before making this dish. This breaks down toxic enzyme inhibitors and gluten, so digestion is much easier.

Viva Institute’s 30 Days of Gratitude

In November 2010, a group of people decided to try a community experiment. It was based on the scientific research that shows that by practicing gratitude on a daily basis, people can actually increase their level of happiness. To learn more about this project, visit the official website.

Beginning on August 1, 2011, we’re going to give this experiment a try. Over the next 30 days, every time that you experience something that “raises your vibration,” something that makes you feel grateful, write it down.

Initially, it can be very simple things: the way the sun comes through the window in the morning, the way a loved one or your pet greets you when you walk in the door, the coworker who smiled at you during a particularly tense meeting, the luxurious feeling of a warm bath, and so on.

Write it all down, either throughout your day or at the end of the day before you go to bed. We invite you to post your “gratitudes” here, on Viva’s fanpage on Facebook, or you may even want to register on the project’s website.

Vamos experimentar vários pratos diferentes, trocar receitas e dicas, e conhecer pessoas interessadas no mesmo estilo de vida. As pessoas que comem vivo e mesmo aquelas que simplesmente decidem se alimentar de uma maneira mais saudável dizem que a parte mais difícil da mudança é a socialização e a reação de amigos e familiares, que por costume nem sempre apoiam grandes transformações. Por isso é que a formação de um grupo de apoio e suporte na comunidade é importante. E é por isso que existem os  banquetes vivos. Portanto venham se reunir com a gente!
